Yes it can play switch games that support local wireless with a real Nintendo switch. The only caveat is that the switch needs to be modded, running atmosphere cfw, and has to have a specific plugin installed. Then it works similar to yuzu, you just both need to be on the same network. Imo, it's easier to just use 2 PCs and yuzu on both.

The handheld IS the console, the dock just transmits the signal to your TV. And to answer your question, yes in tabletop mode, which is handheld, but there's a kickstand that you can use to make the Switch stand on a table, you can play Coop just fine. Towerfall, Astro Bears and Lovers in a Dangerous Spacetime go on sale often enough and are cheap, fast games to play. Death Squared is one of my favoutrire co-op puzzle games on the switch. The new Mario 3D World has 4 player and is apparently fantastic. Moving Out has a demo you can try.
